Protocol 'Hide Nothing': The Economic Anatomy of a Biryani

February 06, 2026 • Culinary Ops

The restaurant industry is built on a specific kind of opacity. You pay ₹400 for a dish. You have no idea if the ingredients cost ₹50 or ₹250. You don’t know if the chef is paid a living wage. You trust the “Brand.”

But in the age of information, Blind Trust is a depreciating asset.

At FoodHero, we enforce Protocol: Hide Nothing. We believe the customer is intelligent enough to understand the economics of their nourishment. We are not afraid of the math.

The Receipt on the Box

When you order a Shah Biryani (Royal Box) for ₹290, we intend to print the following breakdown directly on the physical packaging:

Component Cost (₹) Details
Raw Material ₹112.50 200g Basmati (aged 2 years), Saffron (Kashmir), Ghee
Labor ₹45.00 Prep time: 14 mins. Cook pay: 20% above market avg.
Fuel & Utility ₹18.00 Gas, Electricity, Water filtration
Packaging ₹15.00 Corn-starch biodegradable box
Logistics ₹40.00 Delivery partner payout (Direct)
Tax (GST) ₹14.50 Government mandated
FoodHero Net ₹45.00 15.5% Margin

Why expose the margin?

  1. Accountability: If our margin jumps to 40% while the quality drops, you will know. You will hold us accountable.
  2. Education: Consumers often think restaurants are “ripping them off.” By showing the thin margins of food logistics, we build empathy for the entire supply chain. It explains why quality costs what it costs.
  3. Trust: When we say “We can’t lower the price further without compromising the Saffron,” the data proves it.

The “Open Kitchen” is Digital

Most “Open Kitchens” are theater. Real transparency is digital traceability.

  • Batch ID: Every meal will eventually carry a QR code tracing the specific batch of chicken or paneer back to the farm procurement date.
  • Spoilage Reports: We publish our monthly waste data. If we threw away 500kg of tomatoes, we will tell you why (e.g., “Logistics failure in Sector 4”).

We are not perfect. But we are public about our imperfections. That is the only way to build a relationship that lasts decades.
