We source Extra-Long Grain Basmati that has been aged in jute bags for a minimum of 2 years. Aging dries the starch, ensuring that every grain remains distinct and fluffy.

The "Dum" Protocol

We don't just "cook" biryani. We seal it.

  • Layer 1 (Base): Marinated meat, cooked 70%.
  • Layer 2 (Middle): Rice cooked 50%. Saffron infused.
  • Layer 3 (Top): Rice cooked 90%. Fried onions.
  • The Seal: Dough seal applied. Heat lowered to 120°C for 45 mins. Steam cooks the rest.
