Rice is a Time Capsule.
Most biryani chains use "New Rice" to cut costs. New rice is sticky. It clumps. It lacks character.
We source Extra-Long Grain Basmati that has been aged in jute bags for a minimum of 2 years. Aging dries the starch, ensuring that every grain remains distinct and fluffy.

The "Dum" Protocol
We don't just "cook" biryani. We seal it.
- Layer 1 (Base): Marinated meat, cooked 70%.
- Layer 2 (Middle): Rice cooked 50%. Saffron infused.
- Layer 3 (Top): Rice cooked 90%. Fried onions.
- The Seal: Dough seal applied. Heat lowered to 120°C for 45 mins. Steam cooks the rest.
